
Ingredients :
- soup
- 3 large eggs
- 4 1/2 grams bonito flakes
- 1 pints chicken broth
- 1 large shallot
- 1/4 tsp granulated garlic powder
- 1/4 tsp white pepper
- garnish
- 1/4 tsp cilantro
- 2/3 stick butter
Method :
- Put broth in a pot, bring to a boil.
- Add butter, bonito flakes, shallots, garlic, and pepper. Let boil
- Beat one egg, stir the broth add the egg. When the broth is no longer spinning, but boiling add the two eggs, to poach them. It will be fast. Take eggs out one at a time gently and add gently to a bowl. Dip your soup not directly over egg as not to break the yoke.
- Top with cilantro serve immediately, for the yoke will finish cooking. You want the yoke runny. I hope you enjoy!
