Ingredients :
- 1 lb box of spaghetti ( serves four people)
- 1 cup olive oil
- 8 garlic cloves, sliced thin
- 1 tablespoon dried red pepper flakes
- 1 tablespoon fresh chopped fine Italian parsley.
- I can of flat anchovies in oil ( optional)
Method :
- In a large pot of salted, boiling water, add lb. of Spaghetti, and cook al Dente approx. 10 to 12 minutes
- Heat oil in a saucepan over medium heat. Add garlic and brown lightly. Add red pepper flakes and parsley. Remove the pan from the heat after it is cooked.
- When the spaghetti is cooked al Dente, drain. Reserve some water. About 1 cup of pasta water. Return pastas to the pot and add cooked spaghetti to the above ingredients. Serve on a platter and top with grated cheese.
- If you choose to add anchovies, which is optional! Cook in olive oil during the browning of the garlic. Shred anchovies with a knife and fork and cook with the cooked garlic.
- If pasta is too dry, add the Cup of pasta water to Spaghetti.
