Ingredients :
- 40 g Raisins (soaked in as much whiskey as they can hold over 2hrs to 5 days depending on your patience)
- 125 g Butter
- 100 g Dark brown Sugar
- 4 tbs Golden Syrup (you can add more for stickier ones)
- 250 g Oats
Method :
- Pre heat oven to Gas Mark 4 or 180°C
- In a saucepan on a low heat melt the Butter, Sugar and Syrup.
- Once melted add the oats and then cook them out.
- Add the raisins to the saucepan and mix till all the raisins are all coated in the hot mixture.
- Pour the mixture into a buttered baking tray and level and smooth out expelling all the air and compacting the mix.
- Bake for 30 minutes until golden brown.
- Cut into squares and allow to fully cool before turning them out.
- I usually, then store them in a tin and allow 24 hours before having the first full one. This for me allow the very soft bottom to firm up a bit and the crunchy top to soften a little. Yumm..
