
Ingredients :
- skinny rice sticks
- 2 tbsp cooking oil
- 2 cloves garlic (minced)
- 8 shrimp
- 2 fried tofu (cut into pieces)
- 2 eggs, lightly beaten
- 1 handful bean sprouts
- 1 stalk spring onion (cut into 2 inch length)
- ---Tamarind Juice---
- 2 tbsp tamarind
- 1/3 cup warm water
- ---Sauce---
- 3 1/2 tbsp fish sauce
- 4 tbsp tamarind juice
- 1 1/2 tsp chili powder
- 2 1/2 tbsp sugar
- 3 tbsp water
Method :
- Cook the rick sticks according to the package.
- Heat the oil in a wok. Add the garlic and stir fry until aromatic.
- Add shrimp and tofu.
- Once shrimp changes color, add rice sticks in the wok.
- Add egg on one side.
- Add sauce
- Add bean sprouts
- Serve with lime wedge and peanuts
