Ingredients :
- 3 tbsp butter
- 1 large onion, finely chopped
- 1 large bell pepper, diced
- 5 stalk celery, diced
- 1 1/2 cup ham steak, cooked & diced
- 1 packages smoked turkey sausage, diced
- 2 can petite diced tomatoes, 28 oz
- 32 oz chicken broth
- 3 cup okra, frozen
- 1 lb raw small shrimp, frozen & de-tailed
- 2 tsp crab boil
- 2 clove garlic, minced
- 2 tsp salt
- 2 tsp black pepper
- 1 tsp thyme
- 1 tsp oregano
- 4 each bay leaf
- 2 tbsp chopped parsley
- 2 tsp cajun seasoning
- 3 tbsp all-purpose flour
Method :
- In large stock pot melt butter and saute onion, bell pepper, and celery until soft.
- Add ham & turkey sausage and continue to heat till both are warm.
- Add all spices & flour. Stir to combine well.
- Add tomatoes & chicken broth.
- Reduce heat to low cook covered for 2-3 hours stirring occasionally.
- 30-40 minutes before finished cooking bring to a boil. Add okra & shrimp and return to a boil. Reduce heat back down to low, recover, and continue to simmer at least 30-40 minutes or until you are ready to serve.
- Once cooking is completed remove and discard bay leaves. I prefer to serve it over brown or plain white rice.
