Ingredients :
- 1/2 cup (1 stick) butter
- 2 large onions, chopped
- 1/2 cup lemon juice
- 1/2 cup vinegar
- 1/4 cup prepared mustard (or 2 tablespoons mustard powder)
- 1 1/2 lb brown sugar
- 1/4 cup fresh parsley or 2 tablespoons parsley flakes
- 1 to 2 teaspoons pepper, to taste
- 1 to 2 teaspoons garlic powder, to taste
- 1 to 3 teaspoons Worcestershire sauce, to taste
- 1 1/4 cup water
- 1 cup chili sauce
- 1 to 3 tablespoons of your favorite bbq seasoning (I use a Penzeys brand, usually BBQ 3000, GALENA ST., or BBQ 3001.)
- 44 oz ketchup (or 1 28 ounce can of tomato sauce and 2 cups ketchup)
Method :
- Melt the butter in a stockpot over medium heat.
- Add the onion and cook until softened, about 10 minutes, stirring often.
- Add the lemon juice, vinegar, mustard, brown sugar, parsley, pepper, garlic, water, Worcestershire sauce, and bbq seasoning.
- Cook for 5 minutes.
- Add the chili sauce and the ketchup (or ketchup/tomato sauce if using)
- Reduce the heat to low and cook, uncovered, for 2 to 2 1/2 hours.
- Stir frequently.
- Let cool and pour into jars.
- Store in the refrigerator.
- *This recipe makes about 7 1/2 cups of sauce.*
