Ingredients :
- 1-2 Tomatoes, super ripe
- 3-4 scoops Cottage cheese
- 1/2 Jalapeno or other spicy chili, optional for a kick
- to taste Sea salt and fresh cracked pepper
- Optional toppings:
- drizzle of olive oil
- balsamic vinegar
- fresh herbs
Method :
- Cut tomatoes into wedges or slices, whichever you prefer. If using hot pepper, dice it finely
- Arrange tomatoes on a plate as pretty as you can ;)
- Top with a couple of spoonfuls of cottage cheese. Sprinkle with salt, pepper and hot pepper if using.
- It tastes good just like that but I love drizzling it with balsamic vinegar, olive oil and fresh herbs too!
