Recipe Ground Turkey and Root Veg Hash with Spinach-Dill Puree

Ingredients :

  • 4 c chopped Root Veggies (sweet potato, carrots, beets, parsnips, etc)
  • 1 small Onion
  • 2 tbsp high heat Oil
  • 1 lb ground Turkey or Chicken
  • Puree
  • 4 c Spinach
  • 1/4 c Dill
  • 1 Garlic Clove
  • Juice and zest of 1 Lemon
  • 1/2 c EVOO
  • Pinch Salt

Method :
  1. Preheat oven to 400 degrees. Toss root veg and onion with oil and season with salt & pepper. Roast veg for 20-30 minutes, stirring once, until slightly caramelized.
  2. Make puree, add all ingredients to a high speed blender and puree. A slightly chunky texture is preferred
  3. Just before the roasting is complete, add ground turkey to a saute pan and cook through, about 5 minutes. Toss sausage with root veg
  4. To serve, portion hash onto 4 plates and drizzle with puree.
