Ingredients :
- 4 c chopped Root Veggies (sweet potato, carrots, beets, parsnips, etc)
- 1 small Onion
- 2 tbsp high heat Oil
- 1 lb ground Turkey or Chicken
- Puree
- 4 c Spinach
- 1/4 c Dill
- 1 Garlic Clove
- Juice and zest of 1 Lemon
- 1/2 c EVOO
- Pinch Salt
Method :
- Preheat oven to 400 degrees. Toss root veg and onion with oil and season with salt & pepper. Roast veg for 20-30 minutes, stirring once, until slightly caramelized.
- Make puree, add all ingredients to a high speed blender and puree. A slightly chunky texture is preferred
- Just before the roasting is complete, add ground turkey to a saute pan and cook through, about 5 minutes. Toss sausage with root veg
- To serve, portion hash onto 4 plates and drizzle with puree.
