Recipe Rollmops and Rice

Resep Rollmops and Rice

Ingredients :

  • 1 cup brown rice
  • 1 tub rollmops (herring)
  • 1/2 yellow pepper
  • 2 tbsp spring onions
  • 1 thumb ginger
  • 4 tbsp coconut oil
  • 200 ml coconut milk
  • 2 cloves garlic
  • 1/2 green finger chilli
  • 1 tbsp dark brown sugar
  • enerous amount of light soy sauce

Method :
  1. Chop garlic, ginger and chillis into small pieces and add to a bowl
  2. Add coconut oil and a generous splash of light soy sauce to the bowl
  3. Remove rollmops (herring) from tub and rinse some of the vinegar away in cold water. Add this and the onions/gherkin to the bowl, mix in well and leave to marinade for 20-30 mins
  4. Boil and cook your rice on the side while this is marinading
  5. Chop yellow peppers and spring onions while you wait for the rice
  6. Shallow fry the spring onions and peppers, and then add in all of the fish and marinade
  7. Pour in the coconut oil and a little extra soy sauce. Cook for ~20 mins or until about half of the liquid has boiled away
  8. Combine with rice and serve!
