Ingredients :
- 8 boneless chicken breasts
- 1 3/4 cups milk of your choice, divided
- 1 1/2 cups flour of your choice
- 3 eggs or equivalent of egg substitute
- 3/4 tsp salt
- 1 tbsp vegetable oil
- 1 tsp tarragon
- 4 oz canned sliced mushrooms, drained
- 1 tbsp butter
- 1 (10 3/4 oz) can cream of chicken
Method :
- Preheat oven to 350 degrees. Grease a 13x9 baking pan.
- Arrange chicken in single layer in prepared baking pan.
- Combine 1 1/2 cups milk, the flour, eggs, & salt in medium bowl. Beat until blended. Add oil & tarragon & mix well. Pour over chicken in baking pan.
- Bake 65 minutes or until meat thermometer inserted in chicken registers 180 degrees.
- Heat butter in saucepan until melted. Stir in mushrooms. Stirring frequently, until heated through.
- Add remaining milk & soup. Mix well. Cook, stirring continually, until heated through & of sauce consistency. Serve with chicken.
