Recipe Blackberry custard cake

Ingredients :

  • 4 eggs, separated
  • 1/2 cup sugar
  • 2 tbsp sugar
  • 2 tsp vanilla extract
  • 1 stick buttermilk
  • 1 1/5 oz dried blueberries, pulverized
  • 3/4 cup flour
  • 2 cup milk
  • 4 tbsp powdered sugar
  • 4 oz blackberries

Method :
  1. Preheat oven to 325°F
  2. Whisk egg whites until foamy about 4 min
  3. Add 2 tbsp sugar and beat until stiff, set aside
  4. Place egg yolks, 1/2 cup sugar,water and Vanilla and whisk until pale and fluffy, about 5-7 min
  5. Add melted butter slowly and mix another minute
  6. Sift blueberries and flour into eggs and fold in gently
  7. Add lukewarm milk and beat until well incorporated
  8. Gently fold in egg whites
  9. Pour batter into a greased 8x8 pan. Bake for 45-55 min until top is golden brown but center is slightly jiggly
  10. Cool 3 hours. Top with powdered sugat and blackberries
