Recipe Black-Eyed Pea Jambalaya

Ingredients :

  • 2 Tbsp Oil
  • 8 oz Ham, 1/2 in cubes
  • 1 lb Smoked Sausage, 1/2 in discs
  • 1 Onion, medium, chopped
  • 1 Bell Pepper, medium, chopped
  • 4 cloves Garlic, chopped
  • 2 (15 oz) cans Black-eyed Peas (with jalapeños)
  • 1/2 cup Parsley
  • to taste Cayenne Pepper
  • 2 cups Beef Broth
  • 1/2 cup Green Onion
  • 5 cups cooked Long Grain White Rice
  • to taste Salt

Method :
  1. Heat oil, combine ham, sausage, onions, bell peppers, and garlic and sauté for 2-5 minutes.
  2. Add peas, parsley, cayenne pepper, broth, and green onions. Simmer for 45 minutes.
  3. Add rice (one cup at a time) until the desired consistency. Add salt to taste.
