Ingredients :
- 2 Tbsp Oil
- 8 oz Ham, 1/2 in cubes
- 1 lb Smoked Sausage, 1/2 in discs
- 1 Onion, medium, chopped
- 1 Bell Pepper, medium, chopped
- 4 cloves Garlic, chopped
- 2 (15 oz) cans Black-eyed Peas (with jalapeños)
- 1/2 cup Parsley
- to taste Cayenne Pepper
- 2 cups Beef Broth
- 1/2 cup Green Onion
- 5 cups cooked Long Grain White Rice
- to taste Salt
Method :
- Heat oil, combine ham, sausage, onions, bell peppers, and garlic and sauté for 2-5 minutes.
- Add peas, parsley, cayenne pepper, broth, and green onions. Simmer for 45 minutes.
- Add rice (one cup at a time) until the desired consistency. Add salt to taste.
