Ingredients :
- 2 large sweet potatoes, cut into noodles
- 3 garlic cloves
- 1 bell pepper diced
- 1/4 cup coconut milk
- 6 green onions
- 1/2 cup chopped peanuts
- firm tofu cut into 1 inch squares
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- DRESSING
- 1/2 cup peanut butter
- 4 inches ginger
- juice of 3 limes
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp oil
- water to thin
Method :
- Preheat oven to 400
- Combine tofu with oil and soy sauce. Then sprinkle with cornstarch.
- Place tofu on a baking sheet and bake 30 min until brown
- Mix peanut lime dressing in a food processor then add water gradually to thin
- Cook garlic then add coconut milk
- Add in bellpepper and sweet potato noodles cover and cook 5 to 7 mon
- Add everything together in the pot
