Ingredients :
- 1 lb wild caught Atlantic salmon
- 1 tbsp Good EVOO
- 1 tbsp coarse sea salt
- 2 tsp fresh cracked black pepper
- 1 lemon
Method :
- Brush salmon with olive oil
- Even apply salt and pepper
- Zest lemon onto the salmon
- Freshly squeeze juice from half the lemon onto the fish
- Refrigerate for am hour or two before cooking
- Preheat oven to 400. When ready, bake salmon skin down for 15-25 minutes (depending on doneness preference)
