Ingredients :
- 1 pie crust
- 1 bunch kale
- 1/2 cup parmesan
- 1/2 chopped onion
- 3 cloves diced garlic
- 1 Potato, sliced thin
- 2 sprigs fresh rosemary finely chopped
- 1 cup ricotta
- 2 tbsp butter
- 1 sprig rosemary
Method :
- Turn oven down to 375°F bake 10 more min
- Melt butter in pan add in chopped onion, cook until onion is soft
- Add chopped garlic cook 1 min
- Add chopped kale cook til kale is wilted
- Take off heat mix in ricotta and chopped rosemary
- Place mixture in pie crust and top with a layer of potatoes, sprinkle leaves from sprig of rosemary and parmesan over the top.
- Drizzle olive oil over the top making sure the potatoes are well coated
- Bake at the 425°F for 20 min. Then broil til potatoes are golden brown.
