Ingredients :
- 3 tbs olive oil
- 2 tbs butter (or as necessary)
- 1/8 tsp cumin
- 1/2 tsp paprika
- to taste adobo or salt
- 1 whole onion (peeled and chopped)
- 1/2 bag baby carrots
- entire bag of celery
- 1/2 tsp parsley
- 2 cups chicken broth
- 2/3 cup milk
Method :
- Heat oil and butter over low heat
- Add chopped celery, baby carrots, chopped garlic and onion and cover over low heat stirring occasionally until soft.
- When soft, add chicken stock, cumin, dried parsley, adobo (or salt) , pepper, paprika and simmer abiut 15-20 min.
- Let pan and contents cool down for a good 20min.
- Once cooled down, put entire pan into blender and blend... (you may have to do half pan at a time because it probably will not all be able to fit.)
- Add 2/3 cup of milk after its blended and store into tuperware or serve immediately.
