Ingredients :
- 1 lb super sweet corn
- 1/2 small red onion; minced
- 2 cans diced green chiles
- 2 T coconut oil
- 2 T butter
- 1/4 C sugar
- 1/4 C coconut vinegar
- 1 lime; zested & juiced
- 1/2 bundle cilantro; chiffonade
- 1 pinch kosher salt and black pepper
Method :
- Heat butter and coconut oil in a large saute pan. Add red onion and a pinch of salt.
- When red onion is nearly caramelized, add corn and toss.
- Add sugar with a pinch of salt and pepper. Toss. Cook 30 seconds.
- Add coconut vinegar, diced green chiles, lime juice, and lime zest. Cook 1 minute.
- Add cilantro. Toss. Serve.
