Ingredients :
- 2 cups lentils
- 1/2 pack bacon
- 3 medium potatoes
- 1/2 onion
- 1 bunch cilantro
- 1 large tomato
- chicken bouillon
Method :
- Cut bacon into very thin strips and throw in a large pot over medium heat.
- While bacon is cooking, cut potatoes into 1 in cubes. Dice tomatoes, onions and chop cilantro.
- Once bacon is cooked add the lentils and 8 cups of water, you can add more or use less it"s really up to how much broth you want.
- After about 10 minutes add in potatoes. Let boil for 20 minutes or until potatoes are soft and tender.
- Add in tomatoes, onion, cilantro and chicken bouillon to your liking and let boil with lid on for 20 more minutes.
