Recipe White Bean Soup - Slow Cooker

Ingredients :

  • 8 pieces center cut bacon, crispy and crumbled
  • 3 (15 oz) cans Great Northern beans, drained and rinsed
  • 4 medium carrots, diced
  • 4 stalks celery, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 bay leaf
  • 1 tbsp parsley
  • 1/2 tsp dried sage
  • 1 tsp dried thyme
  • 1/4 tsp crushed red pepper flakes
  • to taste Salt and pepper

Method :
  1. Place all ingredients except the salt-and-pepper in the slow cooker and stir to combine. Cook for eight hours on low heat.
  2. When soup is almost done cooking, blend most of it to your desired consistency using an emulsifier or immersion blender. If not, put two thirds of the soup into a blender and blend it.
  3. Add salt-and-pepper to taste.
  4. 194 calories per cup!
