Ingredients :

- 1 large Sweet Potato
- 2 large Apples
- Spices
- 1 tsp finely chopped rosemary
- 1 tsp finely chopped thyme
- 1 tsp ground cinnamon
- 1 tsp finely chopped ginger
- 1 tbsp extra virgin olive oil
- 1/2 tsp ground black pepper
- 1/2 tsp salt
Method :
- Preheat the oven to 350°F for baking.
- Dice up the sweet potato into a pile of 1" wedges and throw into a medium bowl. For easy cooking, they shouldn"t be more than 1/2" thick.
- Peel, core, and dice up the two apples into small 1/2" cubes. Throw into the same bowl with sweet potatoes.
- Finely chop the rosemary and thyme together, then finely chop the fresh ginger. Throw all the fresh and dry spices into the same bowl with the main ingredients.
- Pour extra virgin olive oil into the bowl and thoroughly mix everything together. Optionally you can throw everything into a large tupperware, cover, and shake well to mix the ingredients.
- Spread ingredients onto a large flat pan and bake at 350°F for 45 minutes or until soft.
- When done, center on pan, then scoop onto plate, and serve with protein of your choice.
