Ingredients :
- 1/4 cup Sweetener (sugar, stevia, etc.)
- 2 tsp Salt
- 2 cups all purpose flour
- 1 tsp vanilla extract
- 1 1/2 cups Milk
- 2 tsp baking powder
- 1/3 cup oil (coconut or canola)
- 1 tbsp vinegar
- 2 eggs
Method :
- Mix the milk and vinegar.
- Mix all the dry ingredients in a large bowl leaving a cavity in the center to pour wet ingredients into later.
- Turn on stovetop to heat skillet.
- Finish mixing wet ingredients with the milk.
- Pour and mix wet into dry.
- Specialize: add more milk if you want thinner pancakes. Add blueberries or other fruits if you want. I sometimes cook a few cakes, then add fruit so people can choose :-).
- Cook on side one until bubbles are on surface and edges are dry, then flip.
