Ingredients :
- 1 onion, chopped
- 16 oz mushrooms
- 2 tomatoes, chopped
- 10 oz fresh baby spinach
- 1/2 cup white wine
- 1/4 cup panko bread crumbs
- 1/4 cup parmesan cheese
- to taste salt and pepper
- 2 cloves garlic, mined
Method :
- Saute onions until translucent, add mushrooms and garlic.
- Once mushrooms brown add spinach and tomato. Cook until spinach is wilted.
- Add wine and simmer 1 minute turn off heat, add breadcrumbs and cheese, season with salt and pepper
