Ingredients :
- 4 baking potatoes or sweet potatoes
- toppings as desired - butter, baked beans, cheese, tuna mayo, chicken tikka, coleslaw, whatever you like!
Method :
- Scrub the potatoes well and prick all over with a fork. You don"t need to peel them. I do because my hubby won"t eat the skin and makes a fuss about taking it off.....
- Put them on a microwavable plate and set the microwave to 10 minutes. My microwave is 800W so you may need to adjust the time a little. 8 - 11 minutes is a good estimation but take into account the size of the potatoes too. Sweet potatoes need a couple minutes less time than white potatoes do so adjust the time accordingly
- Check if they"re done and if not, give them another minute or so
- Cut into quarters (not quite all the way through) then pile on your toppings!
- 2 x 190g tins of drained tuna mixed with some sweetcorn as and a few tablespoons of mayo (see my egg-free mayo recipe listed) will feed 4 adults with a potato and some salad
