Ingredients :
- 900 g skinless chicken thighs and/or drumsticks
- 1 onion, minced
- 1 large carrot, cut in bite-sized pieces
- 1 large potato, cubed
- 2 large tomatoes, chopped
- 4 cloves garlic, minced
- 2 zucchini, sliced
- 2 Tbsp tomato paste
- 2 handfuls coriander leaves, chopped
- 2 Tbsp cooking oil
- Spices:
- 1 Tbsp ground coriander
- 2 tsp ground cumin
- 1/2 tsp turmeric powder
- 1/4 tsp ground cardamom
- 1/4 tsp cinnamon
- to taste salt
Method :
- Heat oil in a large pot. Saute the onion until it starts to brown a little. Add the chicken and cook each piece so it"s browned on both sides.
- Add potatoes and carrots. Cook for a few minutes while stirring. Add the tomatoes and cook for another few minutes while stirring. Cover the pot and continue to cook on medium for 5-6 minutes, stirring occasionally.
- Add in the garlic and all the spices. Mix well with other ingredients. Add the zucchini, tomato paste, and a little salt and mix in.
- Pour in enough water to just cover everything. Bring to a boil, turn to low and let simmer for 45-50 minutes until every thing is well cooked and the stew has thickened.
- Just before serving, stir in the chopped coriander. Enjoy with basmati rice or bread :)
