Ingredients :
- 8 eggs
- 1 cup xylitol
- 1 1/4 cups coconut milk
- 1 1/2 cups coconut flour
- 4 t baking powder
- 1 t baking soda
- 7 T SANE cocoa powder
- 1 stick unsalted butter
- 2 t vanilla bean powder
- 1 pint coconut cream
- 1/4 cup xylitol
- 1 t vanilla bean powder
Method :
- Preheat oven to 350"F/177"C
- Line the bottom of 2 round 8" x 2" cake pans with parchment paper. Grease sides of pan and top of parchment paper with butter.
- Beat eggs (in a bowl large enough to hold all of the ingredients).
- Add xylitol and coconut milk and combine.
- Add all of the other ingredients and combine well.
- Divide batter evenly into prepared pans. Bake for 28-35 minutes, until cake is just set (the center may still be a little soft). Slightly underbaking is better than overbaking.
- Combine the last 3 ingredients (coconut cream, xylitol, & vanilla bean powder) to make the frosting.
- Let cake cool completely before frosting.
