Ingredients :
- Marinade:
- 1/4 cup fresh orange juice
- 2 tbsp soy sauce
- 2 tbsp freshly grated ginger
- 2 tbsp pomegranate syrup
- 2 tbsp hot mustard
- 1 orange - grated zest
- 2 tsp finely minced garlic
- Sauce/ Glaze:
- 1/3 cup orange juice
- 3 tbsp honey
- 3 tbsp pomegranate syrup
- 2 tbsp soy sauce
- 2 tbsp reserved marinade
Method :
- To assemble the marinade combine all ingredients stir until incorporated.
- add 2 pork tenderloins and marinade mix to a zip top bag for 2 to 4 hours.
- Grill tenderloins on a very hot grill for about 4 to 5 mins a side.
- Baste the meat with the glaze at every turn with a brush.
- Remove meat from the grill when it temps at about 140. Cover and let rest for 10 to 15 mins.
- Cut meat into medallions and serve.
