Ingredients :
- 3 Cups Cooked and Refrigerated White Rice, I prefer to boil Basmati Rice in Beef Broth
- 1 Cup Frozen Baby Peas
- 3 slices Crisp Bacon
- 1/2 Onion, Diced
- 2 Eggs scrambled
- 3 Tbsp Soy Sauce
- 1 Tbsp Sesame Oil
- 1 Tbsp Butter
- 2 Tbsp Fresh Chopped Parsley
Method :
- Lightly whisk 2 eggs and add 1/8 Cup of Water. Microwave for 1 to 2 minutes so eggs are fluffy and there is no liquid left. Scramble with fork and set aside and let cool.
- Fry bacon bacon and onion over medium heat in sesame oil for about 3-4 mins. Strain bacon and keep 2 tablespoon of drippings. Crumble bacon when cool.
- In pan with drippings, add cooked rice, bacon, egg, peas, soy sauce and butter.
- Top with chopped parsley and serve. Enjoy!
