Ingredients :
- 1/3 cup Vegetable Oil
- 3/4 cup Granulated Sugar
- 1 large Egg
- 1 tsp Vanilla Extract
- 1 1/2 cups Plain Flour
- 1/3 cup Cocoa Powder
- 3/4 tsp Baking Soda
- 3/4 tsp Baking Powder
- 1 Pinch Salt
- 3/4 cup Milk
- FILLING
- 1 packet Large Marshmallows
Method :
- Prepare your baking trays by lining them with baking paper then set aside.
- In a large mixing bowl, combine the oil, sugar, egg and vanilla. Then mix well until creamy.
- In a separate bowl, sift flour, coco powder, baking powder, baking soda and salt and mix until just combined.
- Now add dry mixture to your wet ingredients gradually as you add the milk and mix using a spatula until just combined. Do not over mix.
- Note*** The batter at this point is runny but don"t worry it will start to toughen up once it goes in the fridge.
- Once everything is combined, chill the batter in the fridge for about 15-20 mins. Meanwhile, preheat your oven to 350 F ready for the cookies when they come out.
- Spoon the cookies batter into the ready baking tray making sure you leave about 2-3 cm between each one so they don"t end up sticking together, because they will expand once you put them in the oven.
- Bake the cookies for about 8-9 mins. Leave to cool in the baking tray for about a minute or two.... Then transfer into a cooling rack and leave to cool completely.
- FILLING:
- Put the marshmallows into a microwaveable bowl and place into the microwave for about 30 secs. Then use immediately to fill the cookies and sandwich them together!!!!
- Note**** if the marshmallow get to sticking after a while, place in the microwave for about 15 secs and it becomes easier to handle and less sticky.
