
Ingredients :
- 240 g carrots, chopped / batons
- 240 g broccoli florets
- 2 cloves garlic, chopped
- 1 large white potato, chopped
- 960 ml vegetable stock
- 1/2 tsp dried thyme
- pinch nutmeg
- 240 ml light coconut milk
- to taste salt & pepper
Method :
- Put the vegetables in a large pan with the vegetable stock and thyme. Bring to boil then turn down and simmer for 20 minutes
- Puree the whole thing then stir in the milk and nutmeg then season to taste
