
Ingredients :
- 2-3 carrots
- 2-3 celery sticks
- 1 yellow onion
- 1 portobello mushroom
- 1 small bunch parsley
- 5 sprigs thyme (fresh)
- about 10 cups water
- 1 tsp peppercorns
Method :
- Dice vegetables. Add water. Heat till water boils. Then simmer, covered, for about 1.5 hours. The concentration of the stock will be determined by how long the liquid simmers.
- Strain.
- Use or freeze.
