Ingredients :
- 1 celery stalk
- 1 medium carrot
- 1 small onion
- 3 garlic cloves
- salt
- pepper
- 4 cups vegetable broth
- 1 can diced tomatoes (15 ounce)
- 1 1/4 cups green or brown lentils
- 1 bay leaf
- 1 T thyme
- 1 t red wine or sherry vinegar
- Frozen chopped spinach or kale
Method :
- Cook celery, carrot, and onion in a bit of oil or water until softened. Add garlic and season with salt and pepper.
- Add all ingredients except vinegar and spinach, then bring to boil. Lower heat and simmer, covered, about 30 min.
- Test to make sure lentils are done and then add vinegar and spinach.
