Ingredients :
- 1 tbsp butter
- 1 onion
- 2 large potatoes
- 2 large carrots
- 1 parsnip
- 1.5 litres vegetable stock (2 stock cubes)
- 4 stalks celery
Method :
- Peel and roughly chop all vegetables
- Fry onion and potato in the butter in a large pot for 2 minutes
- Cover and sweat for 8 minutes
- Add stock and the rest of the vegetables, and simmer for 29 minutes
