Ingredients :
- 1 medium onion, diced
- 1/2 green pepper, diced
- 4 stalk celery, diced
- 2 clove garlic
- 1 Tbsp cooking oil
- 1 tsp salt
- 1/2 Tbsp oregano
- 1 Tbsp basil
- 1/4 Tbsp paprika
- 1 Tbsp chili powder
- 1 Tbsp cumin
- 1/2 cup roasted corn kernels (optional)
- 1 cup diced tomatoes
- 3 cups brown rice, cooked
Method :
- Saute onion, celery, green pepper and garlic in oil until tender.
- Add salt, oregano, basil, paprika, chili powder, cumin, (corn) and tomatoes.
- Simmer until tomatoes are soft.
- Stir into rice.
