Ingredients :
- 1 can black beans
- 1 can pinto beans
- 1 can kidney beans
- 1 can hominy
- 2 Roma tomatoes (diced)
- 2 tbsp chili powder
- 1 tsp salt
- 1 tsp pepper
- 1 tsp oregano
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 1 lb ground beef
- 1/2 red onion (diced)
- 3 garlic cloves
- 1 tbsp cilantro
Method :
- Rinse the beans and hominy. Place in a stock pot. Add tomatoes.
- Add six cups of water to the beans.
- In a separate bowl, mix: chili powder, garlic powder, cumin, oregano, paprika, salt, pepper.
- Add the spices to the beans. Cook on medium heat.
- In a separate pan: cook the beef.
- When the beef is half way cooked, add red onions, cilantro and the garlic.
- When the onions have softened, add the beef mixture to the beans.
- Cover. Let simmer for at least two hours. Stir occasionally.
