Ingredients :
- 2/3 cups cocoa powder
- 2 cups flour
- 1 1/4 cups light brown sugar
- 1 teaspoon baking powder
- 3/4 teaspoon espresso powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 cup chocolate chips
- 2 large eggs
- 3/4 cup chocolate soy milk
- 2 teaspoon vanilla extract
- 2 teaspoon apple cider vinegar
- 1/2 cup butter melted
- sparkling pearl sugar
Method :
- Preheat oven to 350 F
- In large bowl whisk together cocoa, flour, sugar, baking powder, baking soda, espresso powder, salt and chocolate chips. Set aside.
- Whisk together eggs, milk, vanilla and vinegar.
- Add wet ingredient along with butter to the dry ingredients stirring to blend. Scoop batter into muffin panand sprinkle with pearl sugar.
- Bake 20-25 minutes
