
Ingredients :
- 2 gallons water
- 2 bottles liquid smoke
- 1 Cup Tender quick
- 1/2 Cup Pickling Salt
- 12-15 lb Turkey, defrosted and rinsed
- evoo
- Salt and pepper
Method :
- Dissolve salt and tender quick in water, in a extra large pot or crock.
- Add rinsed, defrosted turkey.
- Soak 40 hours
- During the 40 hours of soaking, turn the turkey in the morning and night to ensure even soaking.
- Rinse turkey, blot dry
- Drizzle turkey with EVOO and salt and pepper.

- For a 14 pound turkey, figure about 2 to 2 ¼ hours of grilling, when the deepest part of the thigh reads 170 F with an instant read thermometer
