Ingredients :
- 10 large flour tortillas
- 4 cups chopped cooked chicken
- 2 cups grated Mexican blend cheese
- 1 cup finely chopped onions cooked slightly
- 3/4 cup green olives
- 1 sweet pepper finely chopped
- 16 ounces sour cream
- 1 cup shredded cheddar cheese
- 16 ounces red enchilada sauce
Method :
- preheat flour tortillas in microwave to soften before rolling
- combined chicken, onion, cheeses, olives, sour cream, peppers and some salsa. Place mixture on tortillas and wrap up. Place each tortillas in a 9x13 glass dish. Pour enchilada sauce over top of all of them.
- bake 50 minutes in a preheated 350 degree oven covered
- sprinkle some cheese on top and a little salsa and bake uncovered 10 more minutes.
- this dish serves well with sides of corn or Mexican rice
