Ingredients :
- 1 tbsp olive oil
- 2 bellpeppers thinly sliced
- 1 onion chopped
- 10 oz sliced mushrooms
- 1/2 cup white wine
- 1 tsp chopped fresh thyme leaves
- 6 skinless boneless 4 oz fillets of snapper sole or flounder
- 2 tbsp lemon juice
Method :
- Preheat oven to 450°F
- Heat oil in a skillet over medium heat. Add peppers and onion, cook until tender about 10 min
- Add mushrooms, wine, and thyme and cook for 3 min
- Place fillets in a greased baking dish, folding under narrow ends. Sprinkle with lemon juice, salt and pepper
- Spoon vegetable mixture over fish. Bake 15 to 18 min until fish is opaque throughout
