Recipe Baked snapper with pepper and onions

Ingredients :

  • 1 tbsp olive oil
  • 2 bellpeppers thinly sliced
  • 1 onion chopped
  • 10 oz sliced mushrooms
  • 1/2 cup white wine
  • 1 tsp chopped fresh thyme leaves
  • 6 skinless boneless 4 oz fillets of snapper sole or flounder
  • 2 tbsp lemon juice

Method :
  1. Preheat oven to 450°F
  2. Heat oil in a skillet over medium heat. Add peppers and onion, cook until tender about 10 min
  3. Add mushrooms, wine, and thyme and cook for 3 min
  4. Place fillets in a greased baking dish, folding under narrow ends. Sprinkle with lemon juice, salt and pepper
  5. Spoon vegetable mixture over fish. Bake 15 to 18 min until fish is opaque throughout
