
Ingredients :
- 2 cup fresh pineapple, cut in small dice
- 3 scallions, sliced thinly
- 5 basil leaves, julienned
- 1 juice of 1 lime
- 1 pinch of salt and pepper
Method :
- Combine all ingredients together. Keep covered in refrigerator until ready to use.
- Serve with Spicy Coconut Shrimp and Lime Coconut Jasmine Rice. Would also be good with fish or shrimp tacos!
