Ingredients :
- 2 strips bacon, diced
- 1 onion, finely chopped
- 4 cups water
- 6 oz sauerkraut, drained
- 1/2 tsp salt
- 1 tsp caraway
- 2 potatoes, peeled and diced
- 1 tsp sweet paprika
- 2 Tbsp flour
- 3 Tbsp sour cream
Method :
- Simmer bacon until rendered.
- Add onion and saute until caramelized.
- Add water, sauerkraut, salt, caraway and potatoes.
- Sprinkle with sweet paprika and boil until you can stick a fork in the potatoes and it releases easily.
- Thicken with flour diluted in 1/4 cup cold water.
- Add sour cream and mix.
- Serve immediately.
