
Ingredients :
- 1 cup Jasmine/long grain rice
- 2 cup Water
- 1/4 cup Chopped cilantro (or as needed)
- 1 Egg
- Salt and Pepper
Method :
- Bring 2 cups of water to a boil
- Once at a boil add rice. Cover and let simmer for 10-12 minutes
- With about 3 minutes left, stir in most of the cilantro and allow rice to simmer again.
- While the rice simmers crack and beat an egg, adding cilantro, pepper, and salt. Add milk (I used soy milk) and scramble
- Chop up the egg into fine bits and stir into the rice along with more salt and pepper. Add butter and stir.
- Serve immediately as a side or a dish
