Ingredients :
- 2 leeks, sliced
- 250 grams broccoli florets
- 250 grams potatoes, peeled and diced
- 600 ml vegetable or chicken stock
- 100 grams fresh spinach leaves
- 200 ml light coconut milk or milk of choice
- freshly ground black pepper
Method :
- Put the potatoes, broccoli and leeks into a soup pan with the vegetable stock, cover and bring to boil
- Cover and turn down to a simmer for 20 minutes. Don"t worry if the liquid doesn"t cover the vegetables. They"ll steam with the pan lid on
- Add the spinach and stir in until wilted, 30 seconds or less
- Pour into a blender and puree smooth
- Pour back into the pan and stir the milk through over a low heat
- Season to taste
- A great way to get lots of iron and vitamic C into the kids!
