Ingredients :
- 4 Portobello Mushrooms
- 1/2 red bell pepper
- 2 Roma tomatoes
- 1 zucchini
- 2-3 cloves garlic minced
- 1 cup spinach
- 1/2 tsp thyme
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup Alfredo sauce
Method :
- Remove stems and gills of the mushrooms. Place upside down on a baking sheet.
- Dice vegetables (for presentation) or place vegetables and spices in a blender.
- Place vegetables or mixture on the mushroom caps.
- Spread sauce over each mushroom. Bake at 375 for 15 minutes.
