Ingredients :
- Dough
- 1/2 tsp baking powder
- 3 tbsp Olive oil
- 150 ml Milk
- 1 tsp Salt
- 1 each Eggs
- 400 grams flour
- Filling
- 200 grams chorizo
- 600 grams potatoes startchy kind( grated)
- 1/2 tbsp oregano
- 1 tbsp tomato paste
- 100 grams grated cheddar
- 1/2 each Red bell pepper
- 1 egg
- Side Salad
- 1/4 head Cabbage
- 1 dash Balsamic vinegar
- 2 each Carrots
Method :
- Make Dough by mixing all dry ingredients then whisk Milk, 1 egg yolk and oil Add to dry mix adjust with some flour if needed.
- Fry chorizos. Then add the grated potatoes to frying pan and cook until not raw. season with oregano salt and pepper. cook the tomato paste out and mix in.
- Divide dough into 10 pieces. Roll out to make 10 circles with diameter of around 10 cm.
- Mix in remainding egredients into mix and fill the empanadas folding them in half and seal with egg wash.
- Egg wash and Bake in oven at 200 c for about 20 minutes.
- Are they golden brown ?, great then they are reedy ,,, enjoy with simple pizza salad or a fresh style coleslaw , "fantastic bread meets meat experience!".
