Ingredients :
- 1 large head Cauliflower
- 8 strips bacon
- 6 tbsp chopped chives
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 cup colby jack shredded cheese or cheddar
- 8 oz container sliced mushroims(optional)
Method :
- Preheat oven to 400°F after bacon is cooked then to 425°F.
- Cook bacon in oven for 20 min.
- In large pot boil water and cook cauliflower for 8-10 min., drain and let cool.
- In LG bowl combine sour cream, mayonnaise, 1/2 crumbled bacon, 3 Tbs chives, 1 cup of cheese and cauliflower. Mix well.
- Place in baking dish.
- Cover with remaining cheese and rest of crumbled bacon.
- Bake for 15-20 min.
- Top with remaining chives and serve.
