Ingredients :
- 2 c cauliflower, riced
- 1/2 c sharp cheddar cheese, shredded
- 1/4 c Parmesan cheese, grated
- 2 T almond flour/meal
- 1 tsp seasoned salt
- to taste, black pepper
- 1 egg
Method :
- Preheat oven to 400°F. Spray mini-muffin pan with non-stick spray.
- Cook cauliflower until tender. Drain well and transfer to bowl. Cool slightly.
- Add cheeses, flour and seasonings a b d mix well. Add egg and stir until just mixed in.
- Using tablespoon scoop, place rounded spoonfuls of mixture into mini-muffin pan.
- Bake 15 min. Turn tots and bake another 15 min. or until lightly browned. Serve immediately.
