Ingredients :
- 150 g dry green lentils (275 g soaked)
- 1/2 tsp coriander seeds
- 1/4 tsp cayenne pepper powder
- 1/4 tsp fennel seeds
- 1/4 tsp salt
- dash pepper
- 1 clove garlic
- 2 Tbsp chopped chives (or fresh cilantro/coriander)
- 1-2 Tbsp flour
- oil for frying
- *Simple Yoghurt Dip*
- 4 Tbsp plain yogurt
- to taste salt & pepper
- to taste Fresh chopped cilantro or parsley
Method :
- Soak lentils overnight and drain. (Note: Do not use cooked lentils!! they will fall apart when frying)
- Combine all the ingredients for falafel (except cooking oil of course) in a food processor. Work in batches if needed.
- Process until the lentils are chopped into a grainy mixture. You don"t want it to be come a paste.
- Form into balls using about 2 Tbsp of the lentil mix each. (it helps to wet your hands a little to prevent the mixture from sticking). If they are falling apart, add more flour to the mixture.
- Heat enough oil for frying in a frying pot. One the temperature is hot, fry the falafel in batches. When one side is golden brown turn over and fry the other side.
- When all sides are golden remove from oil and let drain on a rack or on paper towels.
- Mix together the yoghurt dip ingredients if using that. Serve and enjoy with the yogurt dip!
