Ingredients :
- 2 tbsp dijon mustard
- 1 12 oz jar of Apricot jam
- 1 tsp fresh minced ginger
- 1 tsp sriracha sauce
- 1 tbsp minced garlic
- 2 tbsp honey
- 8 chicken thighs
Method :
- Mix all ingredients except chicken in a saucepan. Over low heat, simmer together for about 10 minutes, stirring to prevent sticking.
- Pat chicken dry, place into a 13x9 pan, seasoning well. Pour apricot mixture over top. Cover tightly with foil. Cook at 400° until done, about 45 minutes or until juices run clear. Delicious!
