Ingredients :
- 2 cup cooked mash potato
- 3 tablespoons sour cream
- 4-5 fresh chives cut up
- 2 eggs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 tablespoons plain flour
- 1/2 cup breadcrumbs
- Oil to deep cook
Method :
- MIX all the ingredients apart from the breadcrumbs and 1 egg with the mash until well mixed.
- Mix in a separate bowl the other egg.
- Using your hands or ice cream scoop make yourself a small ball with the mix.
- Place the ball of mix into the egg, then role around in the bread crumbs. Continue to use the rest of the mix.
- You should have between 8 and 10 small shaped crockett balls or maybe a crocketts shape. Heat your oil to around 180 and then cook for around 6-9 minutes.
- Serve with a main meal or great on their own with some mayonnaise.
