
Ingredients :
- 2 large black mushrooms
- 2 slices bread
- 40 g feta
- 60 g biltong
- 1/2 gherkin choppped
- 60 g cheddar
- 15 ml tobasco
- 2 large eggs
- 1 Tbsp butter
- to taste salt and pepper
Method :
- Remove mushroom stems and chop roughly
- Smeer butter on underside (gilled side) of each mushroom and season to taste
- Microwave mushrooms for +-2 minutes or grill till cooked or blanche briefly without butter
- Combine feta, cheddar, biltong, stem pieces & tobasco in a bowl. Share between mushrooms. Place under hot grill till melted
- Cut two circles from bread using wine glass or coffee cup. Butter and toast bread.
- Fry two eggs in a drop of olive or canola oil.
- Assembly: place grilled mushrooms in centre of plate. Place toast on top of each. Add egg to each
